Introduction
Shepherd’s pie, also known as cottage pie, is a traditional Irish dish made with ground lamb or beef, vegetables, and a crust of mashed potatoes. This hearty and comforting dish is perfect for a chilly Saint Patrick’s Day celebration.

Ingredients
- 400g good quality British beef mince
- Sunflower oil for frying
- 2 shallots, finely chopped
- 3 fresh thyme sprigs, leaves picked
- 200g button mushrooms, quartered
- 2 medium carrots, finely chopped
- 1 tbsp tomato purée
- 400g can chopped tomatoes
- 150ml red wine
- 2 tbsp plain flour
- 4 tbsp Worcestershire sauce
Instructions
Step 1
Heat a large frying pan and add a little sunflower oil. Fry the beef mince until browned, then remove with a slotted spoon and set aside.
Step 2
In the same pan, add a little more oil if needed, then fry the shallots, thyme, mushrooms, and carrots until they begin to soften.
Step 3
Stir in the tomato purée, chopped tomatoes, red wine, plain flour, and Worcestershire sauce.
Bring to a simmer and cook for 20-30 minutes until the sauce has thickened.
Step 4
Preheat your oven to 200°C/180°C fan/gas 6.
Step 5
Transfer the meat and vegetable mixture to a large ovenproof dish. Top with mashed potatoes and smooth over with a fork.
Step 6
Bake in the oven for 25-30 minutes until the potato topping is golden and the filling is bubbling.
